I have recently build a Proliant DL360G5 with Etch without problems.

Now, DL320 servers are not SCSI/SAS and will probably cause more problems. As you can see in the compatibility matrix : http://h71028.www7.hp.com/enterprise/cache/433096-0-0-0-121.html

DL320G5 are supported with Etch.
If you want hardware RAID, you can add an additional HBA SCSI card and use SAS drives.
To keep the garranty, you'll have to buy a HP SmartArray card.
