As you see, "The Debian Way" is to use dpkg-reconfigure.

Often, Xorg will at least start by not using an xorg.conf file at all.

If dpkg-reconfigure doesn't give you a functioning X, you could try, as root:

# xorg -configure

This should generate a basic config file that you can edit or at least get some info to then plug into your dpkg-reconfigure answers.
