create a .forward file in your home directory, and put a line in it of the form:
|"|$HOME/bin/your.program -and some arguments"

look at http://linuxgazette.net/issue14/procmail.html for some details

if you want to do something fancier, install procmail (Google it)

do a little research - you want to get permissions set properly, to avoid opening up a really big security hole in your system, and you want to be careful not to set up any mail loops
