I don't see how virus outbreaks will be more prevalent with Exchange since it is only an information store.
Maybe you mean the Outlook client?

In any case, I use McAfee Groupshield on Exchange with amazing effect. Block known extensions such as .scr .bat .exe .pif and others and you will have a rock solid messaging platform.
