pkill -1 snort
will sends a signal to snort to start writing into a new file without killing the actual SNORt process.  

You can call this from a file say "root" which you can put under /var/spool/cron. This file "root" will look like
0,10,20,30,40,50.... pkill -1 snort.  

This will make sure this command will be called after every 10 minutes by cron job.
